Great pizza in France? Sure!

Richard Weiss

I have heard Italians say that pizza in France is a "catastrophe". Pizza, that nearly universal comfort food, is easy to make but not always easy to make well. Even in Italy we have had bad pizza!

Pizza does struggle in France. Often there is a vaguely sweet taste to them; often they'll use Emmental cheese instead of real mozzarella. Usually the crust is just missing a certain...."je ne sais quoi".

But go to "Pinnochio Restaurant" in the old town of Nîmes and you will find a delicious pizza! This is not just a plug for a restaurant; this is a genuine find by pizza connoisseurs (us!).

The exterior of the crust is fluffy whilst the middle remains thin. The toppings are varied and interesting, and generously spread. Try the buratta with a whole ball of the cheese in the centre, or my favourite, the spianata with spicy sausage!

Bon appetit!
